Recipe: Blueberry Pie Smoothie

If fruit could be a rock star, the blueberry would give Mick Jagger a run for his popularity—and maybe even his knighthood status. Hey, it could happen. The last we heard this spherical little gem has become Britain's fastest-growing fruit. But that's an aside.

Like Jagger, the blueberry has earned its merit based on two things: talent and influence.

The superfruit positively affects the body via its anthocyanins, which give the berry its blue color and antioxidant effects. These talented phytochemicals inhibit inflammation, counteract oxidation, and reduce the risk for diseases, such as cancer and diabetes. And the blueberry's high levels of vitamin C help ward off the common cold or flu.

This smoothie is chock-full of blueberries and all their acclaim. It's also rich in protein, probiotics, fiber and calcium. Along with it being good for you, it also happens to taste a lot like blueberry pie.

And Jagger said, "You can't always get what you want." Pssshh.

Ingredients

  • 1 cup unsweetened vanilla almond milk
  • 1/2 cup plain Greek yogurt
  • 1 cup fresh blueberries
  • 1/4 cup dried blueberries
  • 1 cup baby spinach
  • 1/4 cup gluten-free rolled oats
  • 1/4 cup slivered almonds
  • 1 tablespoon raw honey
  • 6 to 8 ice cubes

Instructions

Place all the ingredients in a blender. Blend on high until smooth.
