Homemade Ketchup Recipe
Ingredients
1 6 oz. can tomato paste
1 teaspoon onion powder
1/4 teaspoon allspice
1 1/4 cups water
1 large garlic clove, finely minced or grated
1 tablespoon agave nectar
1 tablespoon dark maple syrup
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 1/2 tablespoons cider or white vinegar
Place a small saucepan over medium heat, and add all ingredients to the pot. Once the ingredients start to bubble, reduce heat to low and cook for 35 to 40 minutes, or until thickened. Taste and adjust seasoning as necessary.
Variations:
- Add roasted, pureed beets to the above for a vitamin A, potassium and folate-packed beet ketchup
- Add 1 to 2 chipotle peppers and a bit of the adobo sauce that comes in the can for a slightly smoky, subtle heat
Homemade Ranch Dressing Recipe
Ingredients
2/3 cup buttermilk
1/4 cup mayonnaise made with olive oil (sub low-fat or vegan mayonnaise here, if desired)
2 teaspoons Worcestershire sauce
1/2 teaspoon onion powder
1 garlic clove, very finely minced or grated
1/2 teaspoon white vinegar
1 tablespoon each fresh chopped chives, parsley and dill
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon paprika
Combine all ingredients in a bowl and mix well. Thin sauce with additional buttermilk if necessary. Refrigerate for at least an hour before serving.
