Quick Healthy Breakfast: Homemade Waffle Recipe With a Twist

From texture to color to taste, there are a lot of picky kids out there, especially when it comes to vegetables and healthy foods.

For many parents, the biggest concern is making sure your kids eat healthy nutrients. It's extremely difficult to get kids, let alone picky eaters, to consume enough veggies in their diets. The trick to feeding your kids healthy, vitamin-rich foods is to get creative.

Whether it be in a smoothie or a main dish, think outside the box when you take on a recipe and present it to your family. Sometimes that means you've got to hide healthy food.

One morning I decided to use a leftover sweet potato in a homemade waffle mix. In that mix I also tossed in a bunch of spinach. I had no idea how they'd come out, but they were absolutely delicious and better yet, my daughter devoured her breakfast. Now it's a breakfast must-have.

Next time you're looking to wow your kids, whip up this healthy breakfast. Top with cut up fruit for added nutrients.

Homemade Sweet Potato Spinach

Ingredients

- 2 eggs
- 3 cups of flour (try Bob's Redmill Whole-Wheat Pastry Flour)
- 2 cups of water
- 1/4 cup of oil (coconut or olive)
- 2 tbsp of vanilla extra
- 1 large sweet potato cooked, peeled, and mashed
- 3 big handfuls of spinach
- Cinnamon to taste
- Nutmeg to taste
- Cloves to taste
- Ginger to taste

Directions

Mix eggs, flour, water, oil, vanilla extract and sweet potato until smooth (the batter will be thick).

Add spices to taste and the uncooked spinach. Stir well.

Heat up your waffle maker and spoon the batter onto the center.

Cook, then plate.

This should make about 8 to 10 medium-sized waffles.
