Ziploc Omelets
10 to 15 minutesThe most important tool for Ziploc Omelets is bags. You don't have to buy any particular brand, but make sure your choice is microwaveable and won't leach plastic into your food.
If you don't have a microwave in your RV, boil a pot of water and reduce the water to a simmer. Fold the top down on your cooking bag and crack two or three eggs into the bag. Add your favorite omelet ingredients like mushrooms, cheese, ham or onions, and salt and pepper to taste. Seal the bag while gently squeezing the air out.
Once the bag is sealed, squeeze the eggs and gently shake the bag until the eggs and ingredients are mixed. Place the bag into simmering water (or the microwave) for 2-1/2 minutes or until eggs are fully cooked. Allow the bag to stand for one minute before opening; be careful of steam. Top with fresh green onions and serve on a plate, or eat directly from the bag.

Pancakes
5 to 10 minutesThe most difficult part about making pancakes at the campsite is the mess and cleanup, but you can avoid this hassle by preparing ahead of time. Before you leave the house, mix your favorite pancake batter, then transfer it into a to-go container or empty water or ketchup bottle.
At camp, heat a skillet with oil or butter. Cook the pancakes to order as you would at home, and serve with butter and maple syrup, or your favorite toppings.
