5 Pancake Recipes for Every Campsite Meal

Basic Buttermilk Flapjacks

2 cups flour*
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt (optional)
Buttermilk, stir in slowly until thick enough
* May be whole wheat or a mixture of white and whole wheat

Serves 4
In a bowl mix dry ingredients and stir in buttermilk to make a thick batter. Cook on an oiled griddle. Top with your homemade butter or syrup.

Fiber-Fabulous Rice Flapjacks

1 cup milk or water
2 eggs or equivalent
3/4 cup applesauce
1/2 cup rice bran
1 teaspoon ground cinnamon
1-3/4 cups biscuit mix
1-1/2 cups ready-to-eat, or cooked, brown rice

Serves 4 to 6
Whisk milk or water with eggs and stir in applesauce. Mix bran, cinnamon and biscuit mix into a clean bag to blend. Add this to egg mixture and blend until everything is evenly moist. Note: don't overbeat. Fold in brown rice. Cook on a lightly greased griddle.

Banana-Rice Flapjacks

6 ounce container banana-flavored yogurt (not Greek style)
1/2 cup milk
1 egg
2 tablespoons vegetable oil
1 cup flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup ready-to-eat rice
2 small bananas, diced

Serves 2 to 3
Whisk yogurt, milk, egg and oil in a bowl. Pour flour, sugar, baking powder and baking soda in a clean bag and mix it together. Dump into liquid mixture and stir until evenly moistened. Fold in rice and banana. Cook on a lightly greased griddle.
